Description

The Banquet Chef is responsible for the preparation and presentation of main entrees for cafeteria meals and catered events, maintaining safety and sanitary standards and directing students and coworkers.

Examples of Duties

  1. Open and close Cougar’s Den cafe operation as scheduled following set procedures.
  2. Handle all the cash and report back to the accountant
  3. Prepare and present main dishes including meats, fish, gravies, vegetables, soups and other foods to catering standards.
  4. Assists other cooks in main menu items preparation ensuring a timely serve.
  5. Supervise and train student staff and assign daily duties.
  6. Prepare daily order for supplies.
  7. Supervise and assist student staff in set up and breakdown of serving lines.
  8. Check if assistance is needed on service line and assist as needed.
  9. Operate appropriate kitchen machinery and equipment in a safe and sanitary manner.
  10. Maintains kitchen and serving areas in a sanitary and safe condition.
  11. Maintains high standards in food safety and HACCP regulations
  12. Control inventory to insure proper dating, labeling and rotation in preparation process (i.e. walk-ins, reach-ins, and dry goods area).
  13. Assist supervisor and/or purchasing agent in inventory stock for purchase.
  14. Assist in the preparation and serving at catered events as needed.
  15. Participate in staff meetings.
  16. Read food service updates to keep current with the new product and techniques.
  17. Perform related duties as assigned by the Production Manager.

Education

High School graduate or equivalent.

Experience

Three to five years experience of quantity food preparation on a large scale with one to two years of special culinary experience.

Skills

Knowledge of equipment and methods used in large food preparation and catering. Background in nutrition, menu planning and food costing. Working knowledge of catering. Ability to supervise and instruct other workers. Able to work evenings and weekends as needed.
