Description

This person assists in the preparation and presentation of nutritious meals in any of the APU kitchens as assigned.

Examples of Duties

  1. Open and close Dining Service operation as scheduled following set procedures.
  2. Prepare and present main dishes, including meats, fish, gravies, vegetables, soups and other foods to catering standards.
  3. Assists banquet chefs in main dish preparation ensuring a timely serve.
  4. Prepare daily pull sheet, prep list and order list for supplies.
  5. Assist in the preparation and serving areas in sanitary an safe condition.
  6. Clean work areas; maintain kitchen and serving areas 0in a sanitary and safe condition.
  7. Supervise and train student staff and assign daily duties.
  8. Prepare and assist in exposition cooking.
  9. Control inventory to ensure proper dating, labeling and rotation in preparation process (i.e. walk-ins, reach-ins, and dry goods area).
  10. Participate in staff meetings.
  11. Supervise and assist student staff in set up and breakdown of serving lines.
  12. Assist as needed on the service line
  13. Operate appropriate kitchen machinery and equipment in a safe and sanitary manner.
  14. Maintain high standards in food safety and HACCP regulations
  15. Assist supervisor and/or purchasing agent in inventory stock for purchase.
  16. Read food service updates to keep current with the new product and techniques.
  17. Perform related duties as assigned.

Education

High school graduate or equivalent.

Experience

Two to four years experience of quantity food preparation on a large scale.

Skills

Knowledge of equipment and methods used in large food preparation and catering. Background in nutrition desirable. Working knowledge of catering. Ability to supervise and instruct other workers. Able to work evenings and weekends as needed.
